There is nothing really special about orange sorbet. But borrowing an idea from our friend Jose Andres (confit an entire orange and use the rind as a garnish), really adds something special. The sorbet is matched with blood orange juice that is mixed a little xanthan gum and just a touch hazelnut oil sprinkled about, and of course we have to keep the tradmark Andres swirl.
To confit an entire orange is an interesting process, the rind and pith lose all bitterness and turns sweet, the fruit inside becomes an extremely bitter unedable mess. It's nice sometimes when what we normally throw away becomes what we keep, and what we usually keep turns into trash.
